DIRECTIONS:

Pears –

  1. Preheat oven to 400 degrees F.
  2. Wash pears, cut into quarters, and remove core. Set aside.
  3. In a bowl, combine warm water with honey, and vanilla extract. Add pears and mix to coat pears with syrup.
  4. Place the mixture onto a roasting tray and sprinkle liberally with cinnamon (about 2 teaspoons all together).
  5. Bake for 20 minutes and then turn pears so the skin faces out (this is to get that crispiness). Bake for another 10 to 15 minutes or until skins are crispy and golden. Serve warm (or cold) with ice cream.

Ice Cream –

  1. Place frozen banana and vanilla extract in a high-power blender and blend until you reach a creamy consistency.
  2. Add almond butter and blend until well incorporated.
  3. Use an ice cream scoop to serve, and drizzle with a little maple syrup.

“After years of suffering from a digestive disorder, the new eating plan I’m on recommends almond butter. I am NOT a fan of peanut butter and thought almond butter would be just as unpalatable for me. WRONG! I saw Barney Butter in my local market and thought I would give it a try to put on celery sticks. This is now my new Favorite snack. It is WONDERFUL! This is easily digestible and tastes great. Thanks again.” — Cathy
