Rocky Road Almond Butter Balls

1 16 ounce jar Crunchy Barney Butter
1 1/2 cups gluten free brown rice crispies
1 cup gluten free corn flakes, crushed
1 cup plus 1/2 cup gluten free oats, divided
1/2 cup flax seed meal
1 cup dark chocolate chips
1 1/2 cups mini marshmallows
1/8 teaspoon salt
1. In a large bowl using a wooden spoon, or stand mixer fitted with a paddle attachment, combine the Barney Butter, rice crispies, corn flakes, 1/2 cup of the oats, flax seed meal, chocolate chips, mini marshmallows, and salt. Stir until all ingredients are thoroughly mixed.
2. Place the remaining 1 cup of oats into a small bowl. Using your hands, roll the Barney Butter mixture into bite-sized balls, then toss to coat the balls in the oats. Place onto a cookie sheet, and repeat with the remaining mixture.
3. These store well in the freezer and will keep in ziploc storage bags for 2 months.
